Staiosha is a new brand from Bunnahbain, a revered Islay distillery. The difference between Staiosha and Bunnahabhain expressions is that Staiosha is a peated whisky (as you'd expect from the whisky Mecca that is Islay).
Independent bottlers have only recently started to bottle Staiosha spirit and already it's receiving great reviews and building quite the following.
The cask we are using is a 100 litre first fill Texan, Garrison Brothers cask. First fill wood imparts a lot of flavour and in a smaller 100 litre cask with greater wood to spirit surface area, we're expecting great results.
We've already tried a sample and at just four years old we can already tell it's going to be great! With vanilla, pepper, a touch of spice and even some salty coastal notes, we think this will mature into a great whisky.
The Texan, Garrison Brothers bourbon wood gives a slightly oily and waxy feel in the mouth too, which we love. We're really looking forward to bottling this cask.

Nestled in the ironically named "Welsh Marshes", Ludlow distillery have been crafting premium spirits since 2018. Absorbing the Ludlow Whisky brand into their operations in 2021 they've rebranded it as their Distiller's Cut line.
This new make has been slumbering in an Ex-Bourbon cask for the first part of its life. We're taking the liquid and giving it a secondary maturation in one of Ludlow's own Cider Brandy barrels for 12 months, adding toffee apple sweetness to this earthy, lightly-peated new make spirit. The small still, re-distilling plates in the column and high Fill ABV mean the spirit needs less time in wood to eliminate contaminants and take on flavour. This is the first cask available from the only whisky distillery in Slovenia. Ageing began in a 220-litre Slovenian oak cask and will later continue in a bourbon barrel. The finest malted barley is mashed with exceptional Slovenian water – recognised as some of the purest in the world – and fermented for 5 days with specially selected yeasts. Historic Rioja Cask
West Midlands Distillery
The West Midlands Distillery have crafted a rare historic 225L Rioja Cask, which has been used for ageing Rioja Wine for 20 Years. It has been filled with our Single Malt spirit, at 58%vol, for ageing into Single Malt Whisky. Our New Make spirit has been crafted using floor malted Barley from Warminster with Plumage Archer and two yeast varieties. A minimum of seven days fermenting with Voss and Hornindal yeast gives a complex, rich and fruity wash. Double distilled on our 100% Copper Pot still with all heads and tails being completely discarded, gives an aggressive cut where only spirit that demonstrates our exacting standards reaches the barrel. Rich, Fruity and Full Bodied characterises our New Make. From the Barrel expect rich Cherry, Red Berries, Plum and Vanilla. A deep colour from its years of use ageing Rioja is sure to impart into the resulting Whisky. We predict to bottle in 2027 but will let the spirit tell us exactly when. We will be watching this one very closely and updating you periodically with its progress.

Cask number R003 - Spooky Somerset Rum made by the Somerset Spirit Co based in Castle Cary, Somerset. They make their small batch rum using sugar cane molasses which is then twice distilled using a 500 litre copper pot still. The chosen cask is a 200 litre once filled ex Bourbon barrel from Heaven Hill distillery in Kentucky, USA. The spirit was filled at 64.8% Abv and will spend 3 years aging in the bourbon soaked oak. You may ask why is it called ‘Spooky Rum’, this is because the cask was filled on Halloween 2023 under the cover of darkness when the spirits were roaming the Somerset countryside, the story is told that the distiller was hit on the head by a falling glass bottle whilst filling this cask and a part of Halloween is locked inside this barrel. ‘True story’. So, the barrel will be unlocked and the spirits released on the eve of Halloween 2026. The distillery was full of aromas during the distillations with tasting notes of sweet banana, caramel and chocolate. We feel the bourbon barrel will complement the rum and make a spirit for whisky and rum connoisseurs alike. The barrel can be viewed on a distillery tour bookable on their website.
