Our 225L Moscatel Wine Cask, first fill, has been filled with our award winning (IWSC silver 90 points) Jester White Rum. The cask has not been recharged to maintain the wines flavour. We tasted this on 04/11/24 the flavour and colour was fantastic, sweet, fruity with great texture. The finish is mildly nutty with molasses and subtle spice.  We only have one of these casks and are launching up to 60 bottles at 4.5 years old exclusively through Still In Cask, each bottle will be individually numbered and bottled at cask strength. Want to know more about the rum?  Our Jester Rum is made completely from scratch in the UK at our carbon neutral distillery in Stratford Upon Avon. We use Molasses as our base which has been milled in the UK. Fermented for 7 days in our 2000L fermentation tank at a high temperature to maximise esterification. Our Wash is about 9% and we do 4 stripping runs on our 500L iStill. We do a final 11 Hour finishing run to capture the purest of the hearts which comes off the still at 72%. This is blended down with water to 55% to then fill the cask, NO SUGAR is added after the distillation. 

Panela Rum Aged in ex-Bulleit Rye Cask

200L ex-rye whisky cask from Bulleit distillery casked at 61% abv and will be aged for 3 years. Filled with our Oxfordshire pure white rum that is fermented over 10 days from organic Columbian panela. Expect layers of spice, vanilla and honey to develop. Bottled at circa 53% abv.

Moody Rum

These barrels have been imported and reconditioned in the U.K. by specialist coopers. There has been no recaharing of the barrels to maintain the flavour profiles, characters and notes installed by the West Indies distillery. They have now been filled at 72% ABV with Moody Rums Multi award winning white rum. These bottles will be delivered at 53%ABV There are only 4 barrels available limited to 150 bottles each with an extremely limited supply.

These barrels have been imported and reconditioned in the U.K. by specialist coopers. They have been dark charred to accentuate the characters and notes formally produced by the Appleton Estate Signature collection. They have now been filled at 72% ABV with Moody Rums Multi award winning white rum. These bottles will be delivered at 55%ABV Number bottles 1-150 limited edition 

Spooky Somerset Rum in a Ex Bourbon Cask
Somerset Spirit Co

Cask number R003 - Spooky Somerset Rum made by the Somerset Spirit Co based in Castle Cary, Somerset. They make their small batch rum using sugar cane molasses which is then twice distilled using a 500 litre copper pot still. The chosen cask is a 200 litre once filled ex Bourbon barrel from Heaven Hill distillery in Kentucky, USA. The spirit was filled at 64.8% Abv and will spend 3 years aging in the bourbon soaked oak. You may ask why is it called ‘Spooky Rum’, this is because the cask was filled on Halloween 2023 under the cover of darkness when the spirits were roaming the Somerset countryside, the story is told that the distiller was hit on the head by a falling glass bottle whilst filling this cask and a part of Halloween is locked inside this barrel. ‘True story’. So, the barrel will be unlocked and the spirits released on the eve of Halloween 2026.  The distillery was full of aromas during the distillations with tasting notes of sweet banana, caramel and chocolate. We feel the bourbon barrel will complement the rum and make a spirit for whisky and rum connoisseurs alike. The barrel can be viewed on a distillery tour bookable on their website.

These carefully crafted barrels have been remanufactured by Speyside Cooperage and given a heavy char to caramelize the natural flavour profiles and develop a clean profile during the ageing process. They have now been filled at 72% ABV with Moody Rums Multi award-winning white rum. These bottles will be delivered at 52%ABV
