Cornish Cider Brandy. We distilled our 7% vintage cider twice in our pot still and put it into a new 50 litre medium toasted European oak barrel. We released our first 5 year Cider Brandy on Still in Cask last year and it sold out quickly. So here is another chance to get it at cask strength. Last barrel started at 67% and ended up at 61% this is currently 77%

Our 225L Moscatel Wine Cask, first fill, has been filled with our award winning (IWSC silver 90 points) Jester White Rum. The cask has not been recharged to maintain the wines flavour. We tasted this on 04/11/24 the flavour and colour was fantastic, sweet, fruity with great texture. The finish is mildly nutty with molasses and subtle spice.  We only have one of these casks and are launching up to 60 bottles at 4.5 years old exclusively through Still In Cask, each bottle will be individually numbered and bottled at cask strength. Want to know more about the rum?  Our Jester Rum is made completely from scratch in the UK at our carbon neutral distillery in Stratford Upon Avon. We use Molasses as our base which has been milled in the UK. Fermented for 7 days in our 2000L fermentation tank at a high temperature to maximise esterification. Our Wash is about 9% and we do 4 stripping runs on our 500L iStill. We do a final 11 Hour finishing run to capture the purest of the hearts which comes off the still at 72%. This is blended down with water to 55% to then fill the cask, NO SUGAR is added after the distillation. 

Adnams Triple Malt Whisky in New American Oak

East Anglian Barley, Wheat and Oats combine in a triple mash bill, aged exclusively in new American oak casks (toasted and charred to Adnams' preference - essentially the type of cask used to mature Bourbon). Distilled by the late, great John McCarthy this is a flavoursome dram exhibiting unique flavours of baking spices, coconut and chocolate, as well as more savoury notes that provide depth and intrigue to the liquid. Bottled at 12 years old (at 55% ABV), this will be one of the oldest English Whiskies on the market, and a single cask, exclusively through Still In Cask.

Organic Single Grain Whisky in Pear Pomona Cask

This is a truly unique cask.
This is an ex-rye cask from the US. It was borrowed by our friends at Wilding Cider to age a (first of its kind) pear pomona before returning it to us.

We have filled this cask with our new make spirit made from 85% malted barley and 15% unmalted barley. It was fermented on a saison beer yeast for a full 14 days before being casked.

This 125 litre first fill bourbon quarter cask was filled at GlenWyvis distillery (Scotland's first community owned distillery) on the 19th of July 2022 and has been maturing at our onsite warehouse in the Scottish Highlands.

As our original Staoisha release sold out in record time, we decided to create a second sherried version so that you have the opportunity to compare bourbon and PX sherried Staoisha whiskies.

Staoisha is a new brand from Bunnahabhain, a revered Islay distillery. The difference between Staoisha and Bunnahabhain expressions is that Staoisha is a peated whisky (as you'd expect from the whisky Mecca that is Islay).

Independent bottlers have only recently started to bottle Staoisha spirit and already it's receiving great reviews and building quite the following.

The cask we are using is a 100 litre first fill Texan, Garrison Brothers cask. First fill wood imparts a lot of flavour and in a smaller 100 litre cask with greater wood to spirit surface area, we're expecting great results.

We've already tried a sample and at just four years old we can already tell it's going to be great! With vanilla, pepper, a touch of spice and even some salty coastal notes, we think this will mature into a great whisky.

However in September 2026, the whisky will be re-racked into Pedro Ximénez sherry wood which will increase its depth and complexity  by adding classic PX flavours and intense dried fruit aromas such as dates, prunes and raisins, coupled with spices of nutmeg and clove, this becomes reminiscent of Christmas cake.

The Texan, Garrison Brothers bourbon wood gives a slightly oily and waxy feel in the mouth too, which we love. We're really looking forward to bottling this cask and comparing the sherried version to our original Staoisha release.

Distilled on 8 April 2013 at the historic Royal Brackla Distillery, this spirit was initially matured in a bourbon hogshead, allowing it to develop a rich foundation of oak and vanilla notes.  On 30 Sept 2024 the hogshead cask was re-racked into a first fill Pedro Ximenez sherry quarter cask where it will mature for approximately 12 months. This final stage promises to infuse the whisky with deep indulgent sherry flavours including figs, dates, raisins, caramel and dark chocolate. As well as a naturally enriched colour, adding unique layers of complexity to its character.

This is the first cask available of our Slovenian wine brandy. Ageing began in a 220-litre Slovenian oak cask and now continues in used 280-litre cognac cask.  This exceptional brandy is the product of a remarkable collaboration between two distinguished Slovenian partners. The finest wines of the renowned Jakončič Winery in Goriška Brda - where a legacy of viticulture and excellence spans generations - have been skillfully transformed into brandy by the innovative and bold Broken Bones distillery in Ljubljana. The brandy is then meticulously aged in carefully selected barrels, enhancing its character and depth. Vinjak Petreja brandy is both fresh and aromatic, offering a unique and refined tasting experience.

Single Malt Whisky in Ex D'Usse Cognac Barrel 280L
One Point Six Whisky

Single Malt whisky, using a combination of Distilling malt, Cara gold and Crystal malts. Fermented for 168 hours with both distillers yeast and chardonnay wine yeast. This new make is creamy and fruity, reminiscent of stone fruits and malted milk biscuits. This will pair perfectly with the Cognac soaked oak. Casked in a 280L Ex-cognac Barrel, from D'Usse Cognac house, at 63.1% Abv. Bottled at 54%.

Distilled on 8 June 2015 at Ardmore, this spirit began its journey in a traditional hogshead cask, building a robust foundation of smoky peat and rich oak.  On 30 Sept 2024, it was re-racked into a carefully selected ex-Laphroaig cask, where it will finish maturing for approximately 12 months. This final stage promises to impart subtle yet distinctive Laphroaig influences, adding layers of maritime salinity, medicinal notes, and earthy peat smoke to enhance Ardmore’s signature character and complexity.

Ludlow Distillery - Whisky in Cider Brandy Cask

Nestled in the ironically named "Welsh Marshes", Ludlow distillery have been crafting premium spirits since 2018. Absorbing the Ludlow Whisky brand into their operations in 2021 they've rebranded it as their Distiller's Cut line.

This new make has been slumbering in an Ex-Bourbon cask for the first part of its life. We're taking the liquid and giving it a secondary maturation in one of Ludlow's own Cider Brandy barrels for 12 months, adding toffee apple sweetness to this earthy, lightly-peated new make spirit. The small still, re-distilling plates in the column and high Fill ABV mean the spirit needs less time in wood to eliminate contaminants and take on flavour. This is the first cask available from the only whisky distillery in Slovenia. Ageing began in a 220-litre Slovenian oak cask and will later continue in a bourbon barrel.  Broken Bones Whisky is a smooth, complex, and elegant single malt. The finest malted barley is mashed with exceptional Slovenian water – recognised as some of the purest in the world – and fermented for 5 days with specially selected yeasts. The wash is then slowly distilled by our skilled team using a traditional double-distillation process. Our stills, designed to our own specifications, help to achieve our whisky’s distinctive full, fruity flavour.  Our small-batch whiskies have garnered several high awards and have been highly praised by Whiskyfun.com (82-87 points) and The Whisky Bible (91-96 points).

When we expanded we decided to import Bourbon and Rye whiskies from America, finish their ageing here in England, and bottle them at the perfect moment. This particular cask was hand-picked by Black Bridge Owner Ashley McCallum from the world renowned MGP distillery in 2023 and contains 21% Rye Bourbon.

Organic Rye Whisky In Ex Malbec Cask

This ex malbec cask has been filled with our organic rye new make. The rye spirit was created from 51% malted rye and 49% malted barley fermented on a mead yeast for 14 days before being distilled through a whisky hood and 4 plate column. We expect to bottle this cask at 6 years in 2029.

100% malted barley mash bill fermented over 7 days in our open top wooden washbacks using 2 yeast strains. 200L first fill ex-rye barrel from Bulleit casked at 63.5% ABV. 

Historic Rioja Cask
West Midlands Distillery

The West Midlands Distillery have crafted a rare historic 225L Rioja Cask, which has been used for ageing Rioja Wine for 20 Years. It has been filled with our Single Malt spirit, at 58%vol, for ageing into Single Malt Whisky. Our New Make spirit has been crafted using floor malted Barley from Warminster with Plumage Archer and two yeast varieties. A minimum of seven days fermenting with Voss and Hornindal yeast gives a complex, rich and fruity wash. Double distilled on our 100% Copper Pot still with all heads and tails being completely discarded, gives an aggressive cut where only spirit that demonstrates our exacting standards reaches the barrel. Rich, Fruity and Full Bodied characterises our New Make. From the Barrel expect rich Cherry, Red Berries, Plum and Vanilla. A deep colour from its years of use ageing Rioja is sure to impart into the resulting Whisky. We predict to bottle in 2027 but will let the spirit tell us exactly when. We will be watching this one very closely and updating you periodically with its progress.
