Penrock Distillery's Cornish wheated Sour Mash whiskey (Bourbon). We learned our trade during our 21 yr tenure living in Tennessee then brought what we learned back to Cornwall. Aged in new white American 45Lt casks, this double pot distilled, none chill filtered American style whiskey uses a grain bill of 70% Maize, 15% wheat and 15% malted barley. We anticipate a 4 yr maturation, but it will stay in the cast until we feel this single barrel release has reached it's absolute zenith.
