Our 225L Moscatel Wine Cask, first fill, has been filled with our award winning (IWSC silver 90 points) Jester White Rum. The cask has not been recharged to maintain the wines flavour. We tasted this on 04/11/24 the flavour and colour was fantastic, sweet, fruity with great texture. The finish is mildly nutty with molasses and subtle spice. We only have one of these casks and are launching up to 60 bottles at 4.5 years old exclusively through Still In Cask, each bottle will be individually numbered and bottled at cask strength. Want to know more about the rum? Our Jester Rum is made completely from scratch in the UK at our carbon neutral distillery in Stratford Upon Avon. We use Molasses as our base which has been milled in the UK. Fermented for 7 days in our 2000L fermentation tank at a high temperature to maximise esterification. Our Wash is about 9% and we do 4 stripping runs on our 500L iStill. We do a final 11 Hour finishing run to capture the purest of the hearts which comes off the still at 72%. This is blended down with water to 55% to then fill the cask, NO SUGAR is added after the distillation.
