Spooky Somerset Rum in a Ex Bourbon Cask

Cask number R003 - Spooky Somerset Rum made by the Somerset Spirit Co based in Castle Cary, Somerset. They make their small batch rum using sugar cane molasses which is then twice distilled using a 500 litre copper pot still. The chosen cask is a 200 litre once filled ex Bourbon barrel from Heaven Hill distillery in Kentucky, USA. The spirit was filled at 64.8% Abv and will spend 3 years aging in the bourbon soaked oak. You may ask why is it called ‘Spooky Rum’, this is because the cask was filled on Halloween 2023 under the cover of darkness when the spirits were roaming the Somerset countryside, the story is told that the distiller was hit on the head by a falling glass bottle whilst filling this cask and a part of Halloween is locked inside this barrel. ‘True story’. So, the barrel will be unlocked and the spirits released on the eve of Halloween 2026. The distillery was full of aromas during the distillations with tasting notes of sweet banana, caramel and chocolate. We feel the bourbon barrel will complement the rum and make a spirit for whisky and rum connoisseurs alike. The barrel can be viewed on a distillery tour bookable on their website.

'Wheysky' - Milk Spirit in a Virgin America Oak Barrel

Cask number W012 - Wheysky - A world’s first. The Somerset Spirit Co which is based in Castle Cary, Somerset are known for making a multi award winning milk vodka and in 2019 were the first in the world to oak aged a cows milk spirit. The milk is sourced from Somerset’s many grass grazed cows which is then delivered to Wyke Farms in Bruton to make their award winning Ivy’s Reserve vintage cheddar. The whey from the cheese making process is collected by the Somerset Spirit Co, then using a secret recipe, is turned into a truly unique spirit, which some describe as ‘liquid gold’. The milk spirit is then twice distilled using copper pot stills and has tasting notes of cream, caramel and with a natural sweetness. The chosen cask is a 200 litre virgin American oak barrel and was filled at 63.6% Abv. The milk spirit will spend 3 years aging and we feel the barrel will complement the milk spirit with its sweet notes and light tannings.
